Not only do you toast the haggis, you also toast Scotland, the Scottish Parliment, the lasses, and just about anything else that comes to mind. It made perfect sense at the time. People were toasting and sucking down Scotch faster than I could shoot photographs, but you get the general idea. The Toast to the Lasses is addressed to the women present and was originally a thank you to the lasses in Burns' life. From what I've heard, this toast covers a large part of the female Scottish population in the late 1700s. If the haggis thing didn't convince you to be a Rabbie groupie, maybe this Lassy thing will.
